  • 1 cup fresh rhubarb, chopped
  • 1 cup almond flour
  • 1 cup all-purpose flour
  • ½ cup granulated sugar
  • ½ cup unsalted butter, cold and cubed
  • ½ tsp salt
  • 34 tbsp iced water

Instructions

  1. Preheat oven to 375°F (190°C) and wash/chop rhubarb into bite-sized pieces.
  2. In a mixing bowl, combine almond flour, all-purpose flour, and salt. Add cold butter and mix until crumbly.
  3. Stir in sugar and gradually add iced water until dough holds together. Wrap in plastic wrap and chill for 30 minutes.
  4. Roll out the dough on a floured surface to about 1/8 inch thick and transfer to a parchment-lined baking sheet.
  5. Arrange rhubarb in the center of the dough, leaving a 2-inch border. Fold edges over filling.
  6. Bake for 45-50 minutes until golden brown and crispy.
  7. Let cool slightly before serving warm.
