  • 45 ears fresh corn, kernels removed
  • 2 tbsp unsalted butter
  • 1 medium yellow onion, finely chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (14 oz) full-fat coconut milk
  • 2 tbsp chipotle in adobo sauce

Instructions

  1. Husk the corn and cut the kernels off the cob.
  2. In a pot over medium heat, melt butter and sauté onion and bell pepper until softened. Add garlic and sauté for another minute.
  3. Stir in corn and vegetable broth; bring to a simmer for about ten minutes.
