  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 4 cups low-sodium vegetable broth
  • 1 can (13.5 oz) full-fat coconut milk
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, add olive oil. Sauté the diced onion until translucent and golden, about 5 minutes. Add minced garlic and sauté for an additional minute.
  2. Stir in the diced butternut squash and pour in the vegetable broth. Bring to a gentle boil, then reduce heat and simmer uncovered for about 20 minutes or until the squash is tender.
