  • 1 lb lean ground chicken
  • 4 oz sliced deli ham
  • 1 cup shredded Swiss cheese
  • 1 cup plain breadcrumbs
  • 2 large eggs
  • 2 tbsp Dijon mustard
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup ketchup
  • 2 tbsp brown sugar

Instructions

  1. Preheat oven to 375°F (190°C). Grease a loaf pan with nonstick spray.
  2. In a large bowl, combine ground chicken, diced ham, breadcrumbs, eggs, mustard, garlic powder, salt, and pepper. Mix until well combined.
  3. Press half of the meat mixture into the bottom of the prepared loaf pan. Layer half of the shredded Swiss cheese on top.
  4. Add another layer of diced ham over the cheese, pressing down gently. Cover with the remaining meat mixture and seal.
  5. In a small bowl, mix ketchup and brown sugar; spread over the meatloaf.
  6. Bake for about 60 minutes or until internal temperature reaches 160°F (70°C). Let cool slightly before slicing.
