Ingredients
- 1 lb lean ground chicken
- 4 oz sliced deli ham
- 1 cup shredded Swiss cheese
- 1 cup plain breadcrumbs
- 2 large eggs
- 2 tbsp Dijon mustard
- 1 tsp garlic powder
- Salt and pepper to taste
- ½ cup ketchup
- 2 tbsp brown sugar
Instructions
- Preheat oven to 375°F (190°C). Grease a loaf pan with nonstick spray.
- In a large bowl, combine ground chicken, diced ham, breadcrumbs, eggs, mustard, garlic powder, salt, and pepper. Mix until well combined.
- Press half of the meat mixture into the bottom of the prepared loaf pan. Layer half of the shredded Swiss cheese on top.
- Add another layer of diced ham over the cheese, pressing down gently. Cover with the remaining meat mixture and seal.
- In a small bowl, mix ketchup and brown sugar; spread over the meatloaf.
- Bake for about 60 minutes or until internal temperature reaches 160°F (70°C). Let cool slightly before slicing.
