Ingredients

  • 4 lbs beef short ribs
  • 2 tsp salt
  • 1 tsp black pepper
  • 2 tbsp extra virgin olive oil
  • 1 large onion, chopped
  • 2 carrots, sliced
  • 4 cloves garlic, minced
  • 2 cups red wine
  • 2 cups beef broth
  • 2 sprigs fresh thyme

Instructions

  1. Season the beef short ribs with salt and pepper on all sides.
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the ribs in batches until browned on all sides, then remove and set aside.
  3. In the same pot, sauté onions and carrots for about five minutes. Add garlic and cook for an additional minute.
  4. Deglaze the pot with red wine, scraping up any brown bits; simmer for five minutes.
  5. Return the short ribs to the pot along with beef broth and thyme. Bring to a boil, then reduce heat to low and cover.
  6. Braise on low heat for three hours or until tender. Serve with sauce drizzled over.
