- 2 cups red wine
- 2 cups beef broth
- 2 sprigs fresh thyme
Instructions
- Season the beef short ribs with salt and pepper on all sides.
- In a large Dutch oven, heat olive oil over medium-high heat. Sear the ribs in batches until browned on all sides, then remove and set aside.
- In the same pot, sauté onions and carrots for about five minutes. Add garlic and cook for an additional minute.
- Deglaze the pot with red wine, scraping up any brown bits; simmer for five minutes.
- Return the short ribs to the pot along with beef broth and thyme. Bring to a boil, then reduce heat to low and cover.
- Braise on low heat for three hours or until tender. Serve with sauce drizzled over.
