  • 4 tbsp unsalted butter
  • 1 lb baby potatoes
  • 2 tbsp olive oil
  • 2 tsp fresh rosemary, chopped
  • 2 tsp fresh thyme, chopped
  • 4 cloves garlic, minced
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the baby potatoes. Toss them in olive oil, salt, pepper, and fresh herbs until evenly coated. Spread on a baking sheet.
  3. Roast the potatoes for about 25-30 minutes or until golden brown and fork-tender.
  4. Cut the steak into bite-sized pieces. In a skillet over medium-high heat, melt butter until bubbly. Sear the steak bites for about 3-4 minutes per side.
  5. Add minced garlic and additional butter to the skillet while basting the steak bites with the garlicky sauce.
  6. Combine roasted potatoes with steak in the skillet; mix gently and serve hot.
