  • 3 boneless, skinless chicken breasts (about 1 lb)
  • 2 cups fresh mozzarella cheese, shredded
  • 4 ripe tomatoes, diced
  • 1 cup fresh basil leaves
  • 12 no-boil lasagna noodles
  • 2 tbsp extra virgin olive oil
  • 3 garlic cloves, minced
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Spray a baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil and cook seasoned chicken until golden brown (5-7 minutes per side). Let cool and shred.
  3. In the same skillet, sauté garlic until fragrant. Add diced tomatoes, salt, and pepper; simmer for about 10 minutes.
  4. Layer the ingredients: start with sauce at the bottom of the dish, then add noodles followed by shredded chicken, mozzarella cheese, basil, and repeat until all ingredients are used up. Finish with noodles topped with sauce and cheese.
  5. Cover with foil and bake for 25 minutes. Remove foil in the last five minutes for bubbly cheese.
  6. Allow cooling slightly before serving.
