- 1 block (8 oz) feta cheese
- 2 cups cherry tomatoes, halved
- 8 oz penne pasta (or preferred type)
- 4 tbsp olive oil
- 3 cloves garlic, minced
- 2 tbsp balsamic vinegar
- 1/4 cup fresh basil, chopped
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Grease a baking dish with 1 tablespoon of olive oil.
- Place the feta cheese in the center of the dish and surround it with halved cherry tomatoes.
- Drizzle with remaining olive oil, season with salt, pepper, and minced garlic.
- Bake for 25-30 minutes until tomatoes are bursting and feta is gooey.
- While baking, cook pasta according to package instructions until al dente.
- Once out of the oven, mash the feta and mix with tomatoes to create a sauce. Drain pasta and toss it with the mixture.
- Drizzle balsamic vinegar over the top and garnish with fresh basil before serving.
