  • 1 block (8 oz) feta cheese
  • 2 cups cherry tomatoes, halved
  • 8 oz penne pasta (or preferred type)
  • 4 tbsp olive oil
  • 3 cloves garlic, minced
  • 2 tbsp balsamic vinegar
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C). Grease a baking dish with 1 tablespoon of olive oil.
  2. Place the feta cheese in the center of the dish and surround it with halved cherry tomatoes.
  3. Drizzle with remaining olive oil, season with salt, pepper, and minced garlic.
  4. Bake for 25-30 minutes until tomatoes are bursting and feta is gooey.
  5. While baking, cook pasta according to package instructions until al dente.
  6. Once out of the oven, mash the feta and mix with tomatoes to create a sauce. Drain pasta and toss it with the mixture.
  7. Drizzle balsamic vinegar over the top and garnish with fresh basil before serving.
