  • 1 lb lean ground beef
  • 1 packet taco seasoning (approx. 1 oz)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 2 cups shredded sharp cheddar cheese
  • 4 cups tortilla chips

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef; drain excess fat.
  3. Stir in taco seasoning, black beans, corn, and diced tomatoes. Let simmer for 5 minutes.
  4. In a baking dish sprayed with nonstick spray, layer half of the tortilla chips, half of the beef mixture, and half of the cheese. Repeat layers.
  5. Cover with foil and bake for 20 minutes. Remove foil and bake for an additional 5 minutes until cheese is bubbly.
  6. Let cool slightly before serving with desired toppings.
