- 2 tbsp olive oil (divided)

- 1 cup bell peppers (mixed red and green), sliced

- 1 cup provolone or mozzarella cheese, shredded
Instructions
- Heat 2 tbsp olive oil in a large skillet over medium heat. Add sliced flank steak and cook for about 5 minutes until browned. Remove from skillet and set aside.
- In the same skillet, add more olive oil if needed. Sauté onion for 3 minutes until translucent, then add bell peppers and garlic; cook for an additional 5 minutes until softened.
- Return cooked beef to the skillet and pour in beef broth. Mix well and simmer for about 5 minutes.
- Top with shredded cheese, cover, and let it melt for approximately 3 minutes.
