  • 1 lb lean ground beef
  • 1 can (15 oz) black beans, rinsed and drained
  • 4 large flour tortillas
  • 1 cup shredded cheddar cheese
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1 tsp salt

Instructions

  1. In a skillet over medium heat, brown the ground beef until fully cooked, breaking it apart as it cooks.
  2. Drain excess fat if needed, then add cumin, chili powder, garlic powder, and salt. Stir for 2 minutes until fragrant.
  3. Mix in the rinsed black beans and warm everything through for about 3 minutes.
  4. Lay tortillas on a clean surface; spoon the beef mixture onto each tortilla and top with shredded cheese. Roll tightly.
  5. Place seam-side down on a baking sheet and bake at 375°F (190°C) for 10-15 minutes until golden brown.
  6. Serve with salsa or guacamole.
