  • 6 cups tortilla chips
  • 2 cups shredded rotisserie chicken
  • 1 can (15 oz) black beans, rinsed and drained
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup salsa (mild or spicy)
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 tsp ground cumin

Instructions

  1. Preheat your oven to 350°F (175°C). Spray a large baking dish with nonstick cooking spray.
  2. In a bowl, mix the shredded chicken, black beans, 1 cup of cheddar cheese, and salsa until combined.
  3. Layer half of the tortilla chips at the bottom of the baking dish. Pour half the cream of mushroom soup over the chips, then add half of the chicken mixture.
  4. Repeat layers with remaining tortilla chips, mushroom soup, and chicken mixture.
  5. Top with the remaining cheddar cheese.
  6. Bake for 25-30 minutes until bubbly and golden brown.
