  • 2 tsp espresso powder
  • 1/4 cup cocoa powder
  • 1 cup mascarpone cheese
  • 1/2 cup heavy cream

Instructions

  3. In another bowl, cream the softened butter and sugars until fluffy; then add the egg and mix well.
  4. Gradually combine dry ingredients into the wet mixture until just mixed.
  5. Scoop tablespoon-sized dough onto prepared sheets about two inches apart; bake for 10-12 minutes until edges are golden.
  6. Cool completely before filling with a whipped mixture of mascarpone and heavy cream.
  7. Assemble cookies by spreading the filling between two cookies.
