Ingredients

  • 1 cup all-purpose flour
  • 1/3 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter (room temperature)
  • 3/4 cup granulated sugar
  • 1 large egg
  • 2 tsp espresso powder
  • 1/2 cup mascarpone cheese
  • 1/2 cup heavy cream

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, espresso powder, and a pinch of salt. Set aside.
  3. In another bowl, beat butter and sugar until light and fluffy. Add the egg and mix well.
  4. Gradually combine the dry ingredients into the wet mixture until just mixed.
  5. Scoop tablespoon-sized balls onto the baking sheets, spacing them apart. Bake for about 10 minutes or until edges are set.
  6. Allow cookies to cool completely on wire racks.
  7. For the filling, whip mascarpone cheese and heavy cream until fluffy; pipe between two cooled cookies to assemble.
