  • 1 cup green or brown lentils (rinsed)
  • 1 cup finely chopped carrots
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 cup bell peppers (any color, chopped)
  • 1 cup rolled oats
  • 2 tbsp flaxseed meal + 6 tbsp water (flaxseed mixture)
  • 2 tbsp soy sauce
  • 1 tsp Italian herbs

Instructions

  1. Preheat oven to 375°F (190°C) and grease a loaf pan.
  2. Cook lentils in a pot with 3 cups of water until tender (20-25 minutes).
  3. In a skillet, sauté onions, garlic, carrots, and bell peppers in olive oil until softened (about 5 minutes).
  4. In a large bowl, combine cooked lentils (drained), sautéed veggies, oats, flaxseed mixture, soy sauce, and herbs. Mix well.
  5. Transfer the mixture to the loaf pan, pressing down firmly.
  6. Bake for 45-50 minutes until golden brown. Let cool slightly before slicing.
