  • 1 lb beef chuck roast, cut into bite-sized pieces
  • 2 medium sweet onions, chopped
  • 4 cloves garlic, minced
  • 1 cup full-bodied red wine
  • 2 cups low-sodium beef broth
  • 2 tbsp tamarind paste
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Sauté onions in olive oil over medium heat until translucent. Add minced garlic and sauté for an additional minute.
  2. Increase heat to medium-high; add beef chunks, season with salt and pepper, browning on all sides.
  3. Deglaze the pot with red wine, scraping up any browned bits. Let simmer for five minutes.

  5. After one hour of cooking, add shrimp and cook for five more minutes until pink and opaque.
