Ingredients

  • 1 large sweet potato (about 300g), roasted
  • 1/4 cup tahini
  • 2 tbsp freshly squeezed lemon juice
  • 2 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the sweet potato in half lengthwise and roast for 30-40 minutes until tender.
  2. Allow the sweet potato to cool before scooping out the flesh into a food processor.
  3. Add tahini, lemon juice, garlic, olive oil, chickpeas, salt, and pepper to the food processor.
  4. Blend until smooth; scrape down the sides as needed.
  5. Taste and adjust seasoning if necessary.
  6. Serve in a dish with a drizzle of olive oil on top.
