  • 2 medium sweet potatoes, peeled and sliced
  • 1 lb ground beef (or lamb)
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1 can (14 oz) diced tomatoes
  • 2 tsp dried oregano
  • 1/2 tsp ground cinnamon
  • 3 tbsp olive oil (divided)
  • 4 tbsp unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 2 large eggs, beaten

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat 2 tbsp olive oil over medium heat. Sauté onions until translucent; add garlic and cook until fragrant.
  3. Add ground meat to the skillet; season with salt, pepper, oregano, and cinnamon. Cook until browned.
  4. In a greased baking dish, layer half of the sweet potato slices at the bottom. Top with half of the meat mixture; repeat layers.
  5. For the béchamel: Melt butter in a saucepan; whisk in flour until smooth. Gradually add milk while stirring until thickened. Remove from heat and stir in beaten eggs.
  6. Pour béchamel over layered moussaka and bake for about 45 minutes or until golden brown.
