  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 1 cup sour cream
  • 2 tsp vanilla extract
  • 2 cups fresh strawberries, chopped

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted butter; press into the bottom of a greased springform pan.
  2. Beat softened cream cheese and sugar in another bowl until smooth. Mix in sour cream and vanilla until creamy.
  3. Fold half of the chopped strawberries into the cream cheese mixture.
  4. Pour the filling over the crust and smooth the top.
  5. Bake for 50-60 minutes until edges are set but center is slightly jiggly.
  6. Cool at room temperature, then refrigerate for at least four hours before serving. Top with remaining strawberries just before serving.
