  • 1 lb beef sirloin steak (well-marbled)
  • 1 lb baby potatoes (halved)
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper (to taste)
  • 2 tbsp low-sodium soy sauce
  • 1 tbsp honey

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and halve the baby potatoes. Cut the beef sirloin into bite-sized cubes.
  3. In a bowl, toss potato halves with 1 tablespoon of olive oil, garlic powder, salt, and pepper until coated. In another bowl, season the steak cubes similarly.
  4. Spread the potatoes on a parchment-lined baking sheet and roast for about 20 minutes until golden brown and fork-tender.
  5. While the potatoes roast, heat a skillet over medium-high heat with the remaining olive oil. Sear steak bites in batches for about 2-3 minutes per side until browned but tender.
