  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 3 cloves fresh garlic, minced
  • 1 medium onion, chopped
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 can (14.5 oz) diced tomatoes in juice
  • 4 cups low-sodium chicken broth
  • 2 tbsp taco seasoning
  • ¼ cup fresh cilantro, chopped (for garnish)
  • 1 cup crispy tortilla strips
  • ½ cup sour cream

Instructions

  1. Place the chicken breasts at the bottom of the slow cooker.
  2. Add the garlic, onion, and bell peppers; stir to combine.
  3. Pour in the diced tomatoes and chicken broth; sprinkle taco seasoning over everything.
  4. Cover and cook on low for 6 hours or high for 3 hours.
