  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) cream-style corn
  • 1 lb breakfast sausage, cooked and crumbled
  • 2 large eggs
  • 1 cup whole milk
  • 1 package (8.5 oz) cornbread mix
  • 1 cup shredded cheddar cheese, divided

Instructions

  1. Preheat oven to 350°F (175°C). Grease a baking dish.
  2. In a skillet, brown the sausage over medium heat. Drain excess fat.
  3. In a large bowl, combine both types of corn, cooked sausage, eggs, milk, cornbread mix, and half the cheese. Mix until well combined.
  4. Pour mixture into the greased baking dish and spread evenly.
  5. Sprinkle remaining cheese on top.
  6. Bake for 45-50 minutes or until golden brown and set in the center. Allow to cool slightly before slicing and serving.
