Ingredients

  • 2 cups heavy cream (36% fat)
  • 1 cup whole milk
  • ¾ cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp flaky sea salt (to taste)
  • 2 tsp vanilla extract

Instructions

  1. In a mixing bowl, whisk together heavy cream, whole milk, granulated sugar, brown sugar, and vanilla extract until fully combined.
  2. In a saucepan over medium heat, combine ¾ cup granulated sugar with 2 tbsp water. Simmer until golden brown. Remove from heat and gradually whisk in 1 cup heavy cream and salt.
  3. Combine the cooled caramel with the ice cream base mixture until smooth.
  4. Cover and refrigerate for at least 4 hours or overnight.
  5. Churn in an ice cream maker according to manufacturer instructions until soft-serve consistency is reached.
  6. Transfer to an airtight container and freeze for at least 4 hours before serving.
