Instructions
- Rinse lentils under cold water. In a pot, combine lentils with 3 cups of water; bring to a boil. Reduce heat and simmer uncovered for 20-25 minutes until tender but firm. Drain and cool.
- Chop the red bell pepper, cucumber, and red onion into bite-sized pieces.
- In a bowl, whisk together olive oil, balsamic vinegar, mustard, salt, and pepper to create the dressing.
- In a large bowl, mix cooled lentils with chopped vegetables. Pour dressing over the top and toss gently to combine.
- Chill in the refrigerator for at least 30 minutes before serving for best flavor.
