  • 4 oz creamy goat cheese
  • ¼ cup heavy cream (or half-and-half)
  • 1 tbsp lemon juice

Instructions

  1. 1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. 2. Rinse and halve the baby potatoes, then toss them in a bowl with olive oil, salt, pepper, and chopped rosemary until evenly coated.
  3. 3. Spread the seasoned potatoes on the prepared baking sheet in a single layer and roast for about 25-30 minutes until fork-tender and golden brown.
