- 1 tbsp lemon juice
Instructions
- 1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- 2. Rinse and halve the baby potatoes, then toss them in a bowl with olive oil, salt, pepper, and chopped rosemary until evenly coated.
- 3. Spread the seasoned potatoes on the prepared baking sheet in a single layer and roast for about 25-30 minutes until fork-tender and golden brown.
- 4. While the potatoes roast, melt goat cheese and heavy cream together in a small saucepan over low heat, stirring until smooth.
- 5. Stir in lemon juice, season with salt and pepper, then remove from heat.
