Ingredients

  • 2 medium fresh bell peppers (1 red, 1 yellow)
  • 4 oz fresh mozzarella cheese (sliced)
  • 2 slices ciabatta or sourdough bread
  • 2 tsp extra virgin olive oil
  • 1 tsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Slice the bell peppers into strips and toss with olive oil, balsamic vinegar, salt, and pepper. Spread on the prepared baking sheet.
  3. Roast the peppers for 20-25 minutes until tender and slightly charred.
  4. While roasting, slice the bread open and layer one side with mozzarella cheese.
  5. Once roasted, add the peppers on top of the mozzarella. Close the sandwich.
  6. Heat a skillet over medium heat with a drizzle of olive oil. Grill the sandwich for about 4-5 minutes per side until golden brown and cheese is melted.
  7. Slice diagonally and serve warm.
