- 2 medium fresh bell peppers (1 red, 1 yellow)
- 4 oz fresh mozzarella cheese (sliced)
- 2 slices ciabatta or sourdough bread
- 2 tsp extra virgin olive oil
- 1 tsp balsamic vinegar
- Salt and pepper to taste
Instructions
- Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Slice the bell peppers into strips and toss with olive oil, balsamic vinegar, salt, and pepper. Spread on the prepared baking sheet.
- Roast the peppers for 20-25 minutes until tender and slightly charred.
- While roasting, slice the bread open and layer one side with mozzarella cheese.
- Once roasted, add the peppers on top of the mozzarella. Close the sandwich.
- Heat a skillet over medium heat with a drizzle of olive oil. Grill the sandwich for about 4-5 minutes per side until golden brown and cheese is melted.
- Slice diagonally and serve warm.
