Ingredients

  • 2 large fresh red bell peppers
  • 8 oz fresh mozzarella cheese, sliced
  • 4 slices whole grain bread
  • 2 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 425°F (220°C). Halve the red bell peppers, remove seeds, drizzle with olive oil, season with salt, and roast for 20-25 minutes until charred.
  2. Lightly toast the whole grain bread slices.
  3. Spread balsamic vinegar on one side of each toasted slice. Layer roasted peppers and mozzarella slices on top; add fresh basil if desired.
  4. In a non-stick skillet over medium heat, add olive oil and grill sandwiches for about 3-4 minutes per side until golden brown and cheese is melted.
  5. Let cool slightly, slice in half, and serve warm.
