- 8 oz fresh mozzarella cheese, sliced
- 4 slices whole grain bread

- 1 tbsp balsamic vinegar

Instructions
- Preheat oven to 425°F (220°C). Halve the red bell peppers, remove seeds, drizzle with olive oil, season with salt, and roast for 20-25 minutes until charred.
- Lightly toast the whole grain bread slices.
- Spread balsamic vinegar on one side of each toasted slice. Layer roasted peppers and mozzarella slices on top; add fresh basil if desired.
- In a non-stick skillet over medium heat, add olive oil and grill sandwiches for about 3-4 minutes per side until golden brown and cheese is melted.
