- 2 slices sourdough bread
- 2 fresh jalapeños
- 2 oz cream cheese, softened
- 1 cup shredded sharp cheddar cheese
- 2 oz bacon bits (optional)
- 1 tbsp unsalted butter
Instructions
- Preheat your oven to 400°F (200°C). Line a baking sheet with foil and lightly grease it.
- Halve the jalapeños and place them cut side down on the prepared baking sheet. Roast for about 15 minutes until soft and slightly charred. Allow to cool.
- In a bowl, mix cream cheese, shredded cheddar, and bacon bits (if using). Fold in chopped roasted jalapeños.
- Butter one side of each slice of sourdough bread. Spread the jalapeño mixture on the unbuttered side of one slice and top with the second slice.
- Heat a skillet over medium heat and grill the sandwich for about 3-4 minutes on each side until golden brown and cheese is melted.
- Slice in half and serve hot.
