Ingredients

  • 2 slices sourdough bread
  • 2 fresh jalapeños
  • 2 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 2 oz bacon bits (optional)
  • 1 tbsp unsalted butter

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with foil and lightly grease it.
  2. Halve the jalapeños and place them cut side down on the prepared baking sheet. Roast for about 15 minutes until soft and slightly charred. Allow to cool.
  3. In a bowl, mix cream cheese, shredded cheddar, and bacon bits (if using). Fold in chopped roasted jalapeños.
  4. Butter one side of each slice of sourdough bread. Spread the jalapeño mixture on the unbuttered side of one slice and top with the second slice.
  5. Heat a skillet over medium heat and grill the sandwich for about 3-4 minutes on each side until golden brown and cheese is melted.
  6. Slice in half and serve hot.
