Ingredients

  • 4 cups chopped fresh rhubarb (about 600g)
  • 1 cup granulated sugar (200g)
  • 4 cups filtered water (960ml)
  • 1 cup freshly squeezed lemon juice (240ml)
  • 2 cups iced water (480ml)

Instructions

  1. Wash and chop the rhubarb into small pieces.
  2. In a saucepan, combine chopped rhubarb, sugar, and filtered water. Bring to a gentle boil over medium heat, stirring until sugar dissolves.
  3. Remove from heat and let cool slightly. Strain the mixture through a fine mesh sieve into a pitcher to remove solids.
  4. Stir in freshly squeezed lemon juice and adjust sweetness if necessary.
  5. Mix with iced water to reach desired dilution.
  6. Serve over ice with lemon slices or mint leaves for garnish.
