Ingredients

  • 2 cups fresh raspberries
  • 3/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1/2 cup water

Instructions

  1. Wash the fresh raspberries under cold water and gently pat dry.
  2. In a saucepan, combine the sugar and water over medium heat. Stir until the sugar dissolves (about 3-5 minutes) and then let it cool slightly.
  3. Blend the cooled syrup with raspberries and lemon juice until smooth.
  4. Optionally strain the mixture through a fine-mesh sieve to remove seeds.
  5. Pour the mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches soft-serve consistency (about 20-30 minutes). If you don’t have an ice cream maker, pour into an airtight container and freeze while stirring every hour until firm.
  6. Serve in bowls or cones, garnished with mint leaves or extra berries.
