  • 3 large eggs

  • 1 package (3.4 oz) instant vanilla pudding mix
  • 2 cups whole milk (or dairy-free alternative)
  • 1 cup whipped topping

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a rectangular baking dish.
  2. In a bowl, whisk together the flour, sugars, baking powder, cinnamon, nutmeg, ginger, and salt.
  3. In another bowl, mix the pumpkin puree, eggs, and oil until smooth.
  4. Gradually add the wet mixture to the dry ingredients; stir until just combined.
  5. Pour the batter into the prepared dish and bake for about 25–30 minutes or until a toothpick comes out clean. Let it cool slightly before poking holes all over.
  6. Whisk together pudding mix and milk until thickened; spread over the cooled cake and top with whipped cream.
  7. Chill in the refrigerator for at least an hour before serving.
