  • 1 cup mascarpone cheese
  • 1 cup heavy cream, chilled
  • 1 cup shelled pistachios, roughly chopped
  • 1 cup strong brewed espresso, cooled
  • 16 ladyfingers
  • 1/2 cup sugar

Instructions

  1. Brew 1 cup of strong espresso and let it cool completely.
  2. In a large bowl, whip the heavy cream with sugar until soft peaks form. Gently fold in mascarpone until smooth.
  3. Roughly chop the pistachios, reserving a handful for garnish.
  4. Dip ladyfingers briefly in cooled espresso and layer them in a serving dish. Spread half of the mascarpone mixture over the ladyfingers and sprinkle with chopped pistachios. Repeat layers ending with mascarpone on top.
  5. Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld.
  6. Before serving, top with reserved pistachios and enjoy!
