- 1 cup heavy cream, chilled

- 1 cup strong brewed espresso, cooled
- 16 ladyfingers
- 1/2 cup sugar
Instructions
- Brew 1 cup of strong espresso and let it cool completely.
- In a large bowl, whip the heavy cream with sugar until soft peaks form. Gently fold in mascarpone until smooth.
- Roughly chop the pistachios, reserving a handful for garnish.
- Dip ladyfingers briefly in cooled espresso and layer them in a serving dish. Spread half of the mascarpone mixture over the ladyfingers and sprinkle with chopped pistachios. Repeat layers ending with mascarpone on top.
- Cover and refrigerate for at least 4 hours or overnight to allow flavors to meld.
- Before serving, top with reserved pistachios and enjoy!
