  • 4 boneless, skinless chicken breasts (680g)
  • 1 cup fresh basil pesto (240g)
  • 2 ripe avocados (400g)
  • 6 slices crispy bacon
  • 4 soft flour tortillas
  • 1 cup cherry tomatoes (halved)
  • 2 cups spinach or mixed greens

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper and cook for 6-7 minutes on each side until fully cooked.
  2. While chicken cooks, fry bacon until crispy; set aside on paper towels.
  3. Once cooled, slice chicken into thin strips and cut avocados into slices.
  4. Spread a layer of basil pesto on each tortilla. Add sliced chicken, crumbled bacon, cherry tomatoes, and spinach/mixed greens.
  5. Fold in the sides of the tortilla and roll tightly from the bottom up.
  6. Slice wraps in half diagonally and serve immediately with extra pesto for dipping.
