- 1 yellow bell pepper, diced

- 1 can (14.5 oz) diced tomatoes (fire-roasted preferred)
- 2 cups chicken broth
- 2 tsp olive oil
- 2 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- Preheat a large skillet over medium-high heat and add olive oil.
- Season chicken breasts with salt, pepper, chili powder, and cumin. Sear in the skillet for 5-7 minutes on each side until golden brown. Remove and set aside.
- In the same pan, sauté chopped onion and bell peppers for about 3-4 minutes until soft.
- Stir in rice, diced tomatoes (with juices), and chicken broth; mix well.
- Nestle the seared chicken back into the mixture, cover, reduce heat to low, and simmer for 20-25 minutes until rice is tender.
- Fluff with a fork after letting it rest for 5 minutes before serving.
