  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • ½ cup feta cheese, crumbled
  • ¼ cup red onion, thinly sliced
  • ¼ cup extra virgin olive oil
  • 2 tbsp fresh lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. In a bowl, combine cherry tomatoes, cucumber, red onion, and crumbled feta.
  3. Whisk together olive oil, lemon juice, oregano, salt, and pepper in a separate bowl.
  4. Mix cooled pasta with vegetables and feta. Pour dressing over the salad and toss gently.
  5. Chill in the refrigerator for at least 30 minutes before serving.
