  • ¼ cup tequila
  • 2 cups powdered sugar (for frosting)
  • ¼ cup heavy cream (for frosting)
  • 2 tbsp lime juice (for frosting)
  • 2 tbsp tequila (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake tray with liners.
  2. In a bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, cream softened butter until fluffy; gradually add sugar, then mix in eggs one at a time.
  4. Stir in lime zest, lime juice, and tequila until well combined.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Fill cupcake liners two-thirds full and bake for about 18–20 minutes or until a toothpick comes out clean.
  7. For the frosting, beat together powdered sugar, heavy cream, lime juice, and tequila until smooth. Frost cooled cupcakes.
