  • ¼ cup tequila
  • 2 cups powdered sugar (for frosting)

  • 2 tbsp fresh lime juice (for frosting)
  • 2 tbsp tequila (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a bowl, whisk together flour, baking powder, and salt.
  3. In another bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, then mix in lime zest, lime juice, and tequila.
  4. Gradually combine wet and dry ingredients until just mixed.
  5. Fill liners two-thirds full and bake for 18-20 minutes until golden brown. Cool completely.
  6. For frosting, beat butter until creamy; gradually add powdered sugar, lime juice, and tequila until smooth.
  7. Frost cooled cupcakes generously.
