Instructions
- Rinse jasmine rice under cold water until clear to remove excess starch.
- Combine rinsed rice and water in a pot. Bring to boil, then reduce heat, cover, and simmer for 18-20 minutes until water is absorbed.
- In a saucepan over medium heat, mix coconut milk, sugar, and salt until the sugar dissolves; do not boil.
- Transfer cooked rice to a bowl and gently mix in half of the coconut sauce.
- Slice mangoes into thin wedges and arrange alongside sticky rice on plates.
- Drizzle remaining coconut sauce over servings and sprinkle with toasted sesame seeds.
