  • 1 cup jasmine rice
  • 1 ½ cups water
  • 1 cup full-fat coconut milk
  • ½ cup granulated sugar
  • Pinch of salt
  • 2 ripe mangoes, sliced
  • 2 tbsp toasted sesame seeds (for topping)

Instructions

  1. Rinse jasmine rice under cold water until clear to remove excess starch.
  2. Combine rinsed rice and water in a pot. Bring to boil, then reduce heat, cover, and simmer for 18-20 minutes until water is absorbed.
  3. In a saucepan over medium heat, mix coconut milk, sugar, and salt until the sugar dissolves; do not boil.
  4. Transfer cooked rice to a bowl and gently mix in half of the coconut sauce.
  5. Slice mangoes into thin wedges and arrange alongside sticky rice on plates.
  6. Drizzle remaining coconut sauce over servings and sprinkle with toasted sesame seeds.
