  2. Combine sugar and water in a saucepan over medium heat. Stir until the sugar dissolves (about 5 minutes), then let it cool completely.
  3. Mix the cooled syrup with the lemon juice; add mint if desired.
  4. Pour the mixture into a shallow dish and freeze for 1 hour. Stir vigorously with a fork to create fluffiness.
  5. Return to freezer, stirring every 30 minutes until fully frozen (about 3 hours).
  6. Scoop into bowls and garnish with mint leaves before serving.
