  • 4 medium zucchinis
  • 1 lb lean ground beef or turkey
  • 1 cup marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tsp Italian seasoning
  • 3 cloves garlic, minced

Instructions

  1. Preheat your oven to 375°F (190°C) and prepare a baking dish with nonstick spray.
  2. Cut each zucchini in half lengthwise and scoop out the insides to create hollow ‘boats.’
  3. In a skillet over medium heat, brown the ground meat until fully cooked. Add garlic and Italian seasoning, cooking until fragrant. Stir in half of the marinara sauce.
  4. Fill each zucchini half with the meat mixture and top with remaining marinara sauce and mozzarella cheese.
  5. Place stuffed zucchinis in the baking dish, cover with foil, and bake for 25 minutes. Remove foil during the last few minutes for a bubbly, golden topping.
  6. Let cool slightly before serving; drizzle with extra marinara if desired.
