  • 1 can (14.5 oz) diced tomatoes, packed in juice
  • 2 medium carrots, chopped
  • 2 celery stalks, chopped

Instructions

  1. 1. Prepare the Meatballs: In a bowl, mix ground beef, breadcrumbs, half the parsley, garlic, salt, and pepper until combined. Roll into golf ball-sized meatballs.
  2. 2. Brown the Meatballs: Heat olive oil in a pot over medium heat. Add meatballs in batches; cook until browned (5-7 minutes). Remove and set aside.
  3. 3. Sauté Vegetables: In the same pot, add carrots and celery; sauté for 4-5 minutes. Add minced garlic; sauté for an additional minute.
  4. 4. Add Broth and Tomatoes: Pour in broth and canned tomatoes; stir to combine and bring to a simmer.
  5. 5. Return Meatballs: Add browned meatballs back into the pot; simmer for 20 minutes until cooked through.
