Instructions
- Preheat oven to 400°F (200°C). Spread diced sweet potatoes on a parchment-lined baking sheet. Drizzle with olive oil, sprinkle with salt, and roast for about 25-30 minutes until tender.
- Allow sweet potatoes to cool slightly before transferring them to a food processor.

- If the hummus is too thick, add water one tablespoon at a time until you reach your desired consistency.
