  • 4 cups yellow squash, thinly sliced
  • 2 medium zucchinis, thinly sliced
  • 1 medium onion, finely chopped
  • 4 tbsp unsalted butter (divided)
  • 1/4 cup all-purpose flour
  • 2 cups whole milk
  • 1 cup shredded Gruyère cheese (or cheddar)
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare a greased baking dish.
  2. In a large skillet over medium heat, melt 2 tablespoons of butter. Sauté onions until translucent, about 5 minutes. Add yellow squash and zucchini; cook until slightly softened, around 8 minutes. Season with salt and pepper.
  3. In a separate saucepan, melt the remaining butter over medium heat. Whisk in flour until golden brown (about 2 minutes). Gradually add milk while whisking continuously until thickened (about 5 minutes). Stir in half of the cheese until melted.
  4. Layer half of the sautéed vegetables in the greased baking dish; pour half of the Mornay sauce over them. Repeat with remaining veggies and sauce. Finish with a sprinkle of cheese on top.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown.
  6. Allow to cool slightly before serving.
