- 4 cups yellow squash, thinly sliced
- 2 medium zucchinis, thinly sliced
- 1 medium onion, finely chopped
- 4 tbsp unsalted butter (divided)
- 1/4 cup all-purpose flour
- 2 cups whole milk
- 1 cup shredded Gruyère cheese (or cheddar)
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Prepare a greased baking dish.
- In a large skillet over medium heat, melt 2 tablespoons of butter. Sauté onions until translucent, about 5 minutes. Add yellow squash and zucchini; cook until slightly softened, around 8 minutes. Season with salt and pepper.
- In a separate saucepan, melt the remaining butter over medium heat. Whisk in flour until golden brown (about 2 minutes). Gradually add milk while whisking continuously until thickened (about 5 minutes). Stir in half of the cheese until melted.
- Layer half of the sautéed vegetables in the greased baking dish; pour half of the Mornay sauce over them. Repeat with remaining veggies and sauce. Finish with a sprinkle of cheese on top.
- Cover with foil and bake for 30 minutes. Remove foil and bake for an additional 15 minutes until bubbly and golden brown.
