- 4 bone-in pork chops (about 1 inch thick)
- 4 medium Yukon Gold potatoes, thinly sliced (about 2 lbs)
- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp dried thyme
- 1 tsp paprika
- 2 tbsp olive oil
Instructions
- Preheat your oven to 375°F (190°C) and grease a large baking dish.
- In a skillet, heat olive oil over medium heat. Sauté diced onions until soft (about 5 minutes). Add minced garlic for the last minute.
- Layer half of the sliced potatoes in the greased baking dish. Top with half of the sautéed onions, seasoning them with salt, pepper, thyme, and paprika. Repeat with the remaining potatoes and onions.
- Place the pork chops on top of the second potato layer. Pour heavy cream over everything and sprinkle with shredded cheese.
- Cover with aluminum foil and bake for 45 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden brown.
