  • 1 lb lean ground beef
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked. Drain excess fat and transfer to the slow cooker.
  2. In the same skillet, sauté the chopped onion until translucent, then add minced garlic and sauté for another minute.
  3. Combine the browned beef, sautéed onions and garlic, drained kidney beans, diced tomatoes (with juice), chili powder, cumin, salt, and pepper in the slow cooker. Stir well.
  4. Cover and cook on low for 6 hours or high for 3 hours.
  5. About 30 minutes before serving, taste and adjust seasonings as desired.
  6. Serve hot with toppings like shredded cheese or fresh cilantro.
