  • 1 cup dried pinto beans (or 2 cans of pinto beans)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 2 tbsp vegetable oil
  • 1 tsp salt

Instructions

  1. If using dried pinto beans, soak them overnight in water. Drain before cooking.
  2. In a large pot, cover soaked beans with fresh water and bring to a boil. Reduce heat and simmer for 1 to 1.5 hours until tender. Skip this step if using canned beans.
  3. Heat vegetable oil in a skillet over medium heat. Add chopped onion and minced garlic; sauté until golden brown.
  4. Add cooked or canned beans to the skillet and mash with a potato masher or fork until desired consistency is reached.
  5. Stir in cumin and salt, mixing well to combine all flavors.
  6. Serve warm as a side dish or filling for tacos and burritos.
