  • 4 bone-in chicken thighs (skin-on)
  • 1 cup orzo pasta
  • 4 cloves garlic, minced
  • 1/4 cup freshly squeezed lemon juice
  • 2 cups low-sodium chicken broth
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large oven-safe skillet, heat olive oil over medium-high heat. Season chicken thighs with salt, pepper, and oregano. Sear skin-side down until golden brown (about 5 minutes per side). Remove from the pan.
  3. Add minced garlic to the same pan and sauté for about 1 minute until fragrant.
  4. Stir in orzo, lemon juice, and chicken broth. Mix well.
  5. Nestle seared chicken thighs back into the pan on top of the orzo mixture.
  6. Bake in the preheated oven for 25-30 minutes until chicken reaches an internal temperature of 165°F (75°C) and orzo is al dente.
  7. Let rest for five minutes before serving. Drizzle remaining sauce over each serving.
