  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 tsp olive oil
  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 can (10 oz) diced tomatoes with green chilies
  • 2 cups shredded cheddar and Monterey Jack cheese
  • 1 cup crushed tortilla chips

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly spray a large baking dish with nonstick spray.
  2. In a skillet over medium heat, add olive oil. Season chicken breasts with salt, pepper, and taco seasoning. Sauté for 6-8 minutes until cooked through; shred once cooled.
  3. In a large bowl, combine shredded chicken, black beans, corn, diced tomatoes, and half of the cheese. Mix well.
  4. Spread the mixture in the prepared baking dish. Top with crushed tortilla chips and remaining cheese.
  5. Bake for 20-25 minutes until the cheese is bubbly and golden brown.
  6. Allow to cool slightly before serving.
