- 3–4 boneless, skinless chicken breasts (about 1.5 lbs)
- 2 tsp olive oil
- 2 tbsp taco seasoning
- 1 can (15 oz) black beans, rinsed and drained
- 1 cup corn kernels (fresh or frozen)
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups shredded cheddar and Monterey Jack cheese
- 1 cup crushed tortilla chips
Instructions
- Preheat your oven to 375°F (190°C) and lightly spray a large baking dish with nonstick spray.
- In a skillet over medium heat, add olive oil. Season chicken breasts with salt, pepper, and taco seasoning. Sauté for 6-8 minutes until cooked through; shred once cooled.
- In a large bowl, combine shredded chicken, black beans, corn, diced tomatoes, and half of the cheese. Mix well.
- Spread the mixture in the prepared baking dish. Top with crushed tortilla chips and remaining cheese.
- Bake for 20-25 minutes until the cheese is bubbly and golden brown.
- Allow to cool slightly before serving.
