  • 2 cups crushed graham crackers
  • 1/2 cup unsalted butter, melted
  • 1 cup granulated sugar, divided
  • 16 oz cream cheese, softened
  • 1/2 cup sour cream
  • 1 tsp vanilla extract
  • 2 large eggs
  • 1 cup assorted chocolate candy eggs

Instructions

  1. Preheat oven to 325°F (160°C). In a bowl, combine crushed graham crackers, melted butter, and half the sugar. Press into the bottom of a greased springform pan.
  2. Beat softened cream cheese in a large bowl until smooth. Gradually add remaining sugar, then mix in sour cream and vanilla extract.
  3. Add eggs one at a time, mixing gently after each addition to maintain a light texture.
  4. Fold in most of the chocolate eggs (reserve some for topping).
  5. Pour filling over the crust and bake for 50-60 minutes until edges are set but center jiggles slightly.
  6. Cool in the oven with door ajar for an hour, then refrigerate for at least four hours before serving. Decorate with remaining chocolate eggs before slicing.
