  • 1 cup panko breadcrumbs

  • 2 large eggs, beaten
  • ½ cup mayonnaise
  • ¼ cup sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Cut the salmon into bite-sized pieces and pat dry with paper towels.
  3. Set up three bowls: one with flour mixed with salt and pepper, another with beaten eggs, and the third with panko breadcrumbs mixed with garlic powder.
  4. Coat each salmon piece in flour, dip in egg, then roll in panko until well-coated.
  5. Arrange coated salmon bites on the prepared baking sheet; bake for 12-15 minutes until golden brown.
  6. While baking, mix mayonnaise, sweet chili sauce, and sriracha to create the bang bang sauce.
